When my friend Maria (you can find her here and here) came for a visit, we were very good at making home cooked healthy meals. But on our last night together we were both craving something creamy and sweet, and decided to go with this lemon vanilla tart:
1/2 cup sugar
1 tablespoon all-purpose flour
1/4 cup butter, melted
1 tablespoon vanilla
1 recipe Oven-Candied Lemon Slices (recipe below)
Preheat oven to 200°C. Line ready-made pastry dough in an oven proof dish. Bake for 10 minutes. Reduce oven temperature to 180°C.
Meanwhile, in a small bowl, finely shred 4 teaspoons peel from lemons. Squeeze lemon juice.
In medium bowl combine sugar and flour. Add eggs. Beat with electric mixer on medium to high speed for 3 minutes or until mixture is light in color and slightly thickened. Stir in lemon peel, lemon juice, butter, and vanilla. Pour into pastry shell. Bake 20 to 25 minutes or until filling is set and lightly browned.
