Sprinkle of Pastel


Here's a recipe for one of my favorite Spring time desserts. In Switzerland we typically eat this "Osterfladen" around Easter, but it tastes amazing all year round and can be decorated according to season.

What you need:

Ready-made pie dough for a 28 cm pie form

For the creamy fill:

4 tablespoons of raisins
4 dl cream
3 eggs
5 tablespoons sugar
1 lemon (juice and zest)
2 tablespoons flour

Preheat oven to 200°C. Put the dough in a pie form and spread the raisins evenly. Mix all the ingredients except for the flour in a large bowl. Add the flour and gently mix it in. Add the creamy mix onto the pie dough. Don't be worried if the filling is very liquid once you pour it in. It will get solid during the baking process. Bake for 35 minutes.
